How it's made

There is a wealth of information on the internet about how olive oil is made. Here we offer the short version in pictures.


Olives grow on trees and if they are lucky the trees are in the shadow of Caltabellotta.

After harvesting, they go to the oleificio. They go into this bin and up the belt where this giant vacuum removes any remaining leaves and twigs.

After washing, the olives fall into this bin. From here the olives are pulverized and pumped to the masher.
